Have you had a sweet potato lately? This root vegetable is an excellent source of beta carotene, vitamin A, vitamin C and dietary fiber, potassium and calcium. Sweet potatoes are easily cooked, baked, broiled or mashed. When making a roast in the crock pot, exchange white potatoes for sweet potatoes to enhance flavor, and add additional nutrients to your meal!
