Eating healthy does not have to be complicated. Pick simple foods that can last a long time, and can be used several ways. For example, bell peppers can make a nutritious snack sliced and easily taken along during the day. They can also be incorporated into a casserole for an evening meal, or diced and added to eggs at breakfast. Dried fruits are another option that not only can fulfill your fruit requirement for the day, but last a while in the pantry, can be integrated into many meals (added to oatmeal) and have a variety of colors, flavors and textures to even make a trail mix to share.
