Nebraska's high school sophomore and juniors are being challenged to create a new ice cream flavor by April 2.
The Food Processing Center at the University of Nebraska-Lincoln is sponsoring a contest and will develop selected entries.
Contest advice is located at http://fpc.unl.edu/contest-fresh-fruits
A base recipe is located at http://fpc.unl.edu/contest-base-recipe
Participants are encouraged to consider economic factors of the ingredients, as well as uniqueness and overall appeal.
The current flavors should not be replicated; the Dairy Store website lists those flavors: http://dairystore.unl.edu/ice-cream.
The winning student will have opportunity to visit UNL for the final production run of the winning flavor. If enrolling at the university in food science and technology, the student will be awarded a $1,500 scholarship.
An open house is scheduled June 9 a the food processing center's 30-year anniversary.
